When you 'take something to the next level', you seek to improve upon it, or you advance to the next logical step in its progression (or a plan already laid out). 'Next-level thinking' is a term given to ideas or plans which will achieve such advancement, and so 'take it to the next level' is an expression you are more likely to hear in professional situations. You can also have 'next-level' technology, science, medicine, or consumer products, to name a few examples. A similar slang variation on this might be 'take it up a notch'.
